Baked Quinoa and Cheese
1 1/2 cups quinoa, rinsed and drained
3 cups water
1 T Olive oil
½ c. mushrooms, sliced
2 cloves garlic, minced
10 oz. frozen spinach, thawed and water squeezed out
2 large eggs
1 cup milk
1 1/2 cups grated cheddar cheese
Preheat oven to 350 degrees. Coat a 13 x 9 inch baking dish with cooking spray.
In a saucepan heat quinoa for 3 to 4 minutes. Remove from heat and rinse thoroughly in a mesh strainer. Return to pan and add water. Bring to boil. Reduce heat to low and cover. Cook until liquid is absorbed, approximately 15 minutes.
In another saucepan, heat oil over medium heat. Add mushrooms and garlic. Cook until tender. Add spinach and cook until heated through.
When quinoa is cooked add to mushrooms and spinach mixture.
Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Transfer to prepared baking dish, and bake 30-35 minutes, or until browned around the edges and on top.
