Banana Bread
2 soft, ripe bananas
1 egg
1/2 cup honey or agava nector
1/3 cup sunflower or canola oil
1 t pure almond extract
1 1/4 cups plus 1 T whole wheat flour
1 t baking soda
1/2 t ground nutmeg
1/2 t ground cinnamon
1/4 t sea salt
1/2 cup water
1/4 cup chopped walnuts
1. Preheat oven to 350.
2. Mash the bananas. Set aside.
3. In a medium-sized mixing bowl, combine the egg, honey, oil, and almond extract.
4. In a small bowl, sift together the flour, baking soda, nutmeg, cinnamon, and salt.
5. Add a small amount of the flour mixture to the egg mixture, blend well. Then add a small amount of the water to the egg mixture, and blend well. Alternate adding the remaining flour mixture and the water to the egg mixture.
6. Add the banana and walnuts to the batter and mix well with a spoon.
7. Pour batter into a greased 3x7 inch loaf pan. Bake for 15 minutes, remove the loaf from the oven, and make a 1 inch deep slice lengthwise down the center of the loaf. Return the loaf to the oven, and bak for an additional 25-30 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the loaf to cool before slicing.
