Everything Salad
Prepare this ahead of time and you’ll have salad ready to go whenever you need it.
Ingredients:
1 can chickpeas (or other cooked beans)
½ red onion, thinly sliced
1 cucumber, seeded and diced
½ c. shredded carrots
1 bell pepper, sliced
¼ c dried cranberries
¼ c sliced almonds or chopped walnuts
½ c plum tomatoes
2 stalks celery, thinly sliced
¼ c. feta cheese, crumbled
Choice of greens
Preparation:
Combine all ingredients except salad greens into a bowl with an airtight lid. Store salad ingredients in the refrigerator until ready to serve. When ready to serve, place salad greens on a large plate and scoop salad ingredients on top. Drizzle with your favorite dressing to taste.
